Recipe – Vanilla and Chocolate Cupcakes

Our very own Team DC master baker Lauren has put together these delicious Vanilla and Chocolate Cupcakes. If only websites were scratch and sniff… mmmm….

Ingredients:

110g butter, softened

110g caster sugar

110g plain flour*

2 teaspoons baking powder

¼ teaspoon salt

2 medium eggs

1 teaspoon vanilla extract

*To make chocolate cupcakes, use 90g of flour and 20g of cocoa powder instead.

Method
:

  1. Preheat the oven to 180C/350F/Gas 4. Line a muffin tin with paper cases
  2. Place the butter and sugar into a bowl and beat until it becomes fluffy and pale.
  3. Sift in the baking powder, flour and salt.
  4. Place the eggs and vanilla in a bowl and beat before incorporating into the dry ingredients.
  5. Beat everything together until just combined.
  6. Spoon the mixture into each of the paper cases.
  7. Bake for 18-20 minutes for normal cupcakes, or 9-10 minutes for mini cupcakes.
  8. Allow to cool for 5-10 minutes in the tin before transferring to a wire rack.
  9. Allow cakes to cool completely before icing them.

Vanilla Buttercream Icing:



110g unsalted butter, softened

110g icing sugar

½ teaspoon vanilla extract

Beat the 110g butter until softened then incorporate the icing sugar, one tablespoon at a time, beating until combined. Add the ½ teaspoon of vanilla extract and beating until light and fluffy.

Chocolate Buttercream Icing:



110g unsalted butter, softened

110g icing sugar

¼ teaspoon vanilla

60g melted (and left to cool) milk chocolate

2 tablespoons of cocoa powder

Beat the 110g butter until softened then incorporate the icing sugar, one tablespoon at a time, beating until combined. Add the ¼ teaspoon of vanilla extract, melted chocolate and cocoa powder and beating until light and fluffy
