A bit of fun as it’s London Cocktail Week:
4 Mars bars, roughly chopped
Place the Mars bars in a glass bowl and place it over a pan half-full of water.
Bring the water to a simmer and as the Mars bars start melting add 30oml of vodka bit by bit.
Keep stirring the mixture until it is all incorporated – the caramel will be the last part to melt. Do not let it boil.
Take off the heat, cool and then bottle.
Place this in the freezer for 24 hours; it won’t freeze but will become thick and cold.
