After several long-haul flights over the last two weeks what i crave now is healthy food to refuel my system, this salad is delicious.
So good – the earthy tones of the beetroot go well with the sweetness of carrots and dried fruit and it’s a riot of colour too as well as nutritious. Try replacing the raisins with apricots for a change – either unsulphured (dark brown and sweeter) or the orange variety!
Did you know that sesame seeds are an excellent source of calcium? Tahini – sesame seed butter – is used in hummus but is also great on toast or in sauces.
Time: 15 minutes
2 carrots, peeled and grated 3 small beetroot (peeled and pre-cooked, or ready-to-eat shop brought), grated 3 tbsp lemon juice 3 tbsp toasted sesame seeds 2 tbsp raisins Salt and pepper
1. Combine all the ingredients together and mix well. Serve with some fresh multi-seed bread and hummus, or as a side salad.
